I made a blueberry pie!

Several months ago, my aunt went blueberry picking and gave us a couple pounds to freeze. When we got back from our Gustav-imposed Baton Rouge "hurrication", of course our freezer was rapidly defrosting. Fortunately, most things were cold enough to salvage if cooked soon. Tonight I pondered what to do with those blueberries and the extra pie crust I had from some quiche I had made.

I've never made a fruit pie, and didn't have a crust for the top, but googled a recipe and found this one, where you make a struedel instead of using another crust. Amazingly, I had most of the ingredients on hand and went to work. The only thing I left out was the corn starch because I didn't have it and I used lime juice instead of lemon juice. I also used splenda instead of sugar as the recipe suggests and was a bit worried about that, but I can't tell the difference. It turned out delish and I had two pieces!

On another note, several visitors and bloggy friends have given me blog awards lately and I am honored and appreciative. Please don't think I have ignored you. I am just trying to get some time to really think who I want to bestow them to. Thanks again!

That looks so yummy. Do you boil the blueberries to make the skin come off or just use the berries with the skins on them?

My 13 yr old likes blueberries, but not me. Still too hot here in CA to put on oven just yet.

FYI - Re the SPOTTT. I had my ad up for almost two weeks and finally heard from them yesterday, they rejected for my autism blog since it was too far down, wanted to let you know it needs to be way up higher and they did approve for my Ins blog. Stinks since they got all that free ad space and now I wait again. I keep going to my Ins blog to click on ads and they take me still to SPOTTT.
